The process of learning a new piece of music is mind-blowing! You start from nothing then practice and improve to get the fruits of your labour. You will develop your memory
You learn hand movements that you have to repeatedly work on, thanks to doing that you will develop your muscle memory, you acquire a new vocabulary (that of music) which then in turn develops lexical memory.
It is also advisable to play from memory when performing because when you no longer need to look at the score. You can then concentrate solely on the sound you are making.
When playing difficult pieces, it can be extremely complicated to read and play, so knowing the score by heart will be necessary.

You will improve your ability to play with others
Joining chamber music groups or participating in duo piano lessons is an excellent opportunity to develop your listening skills; playing with others forces you to be more aware of your surroundings. Slight inaccuracies in rhythm that are acceptable when playing alone become disruptive when playing in a group or duo.
You will learn how to adapt your playing to others and thus make your performance more accurate.
It is simply a fantastic way to progress.

A good musical culture is essential to ensure a quality performance.

On one hand, the complexity of learning it requires extreme concentration and the elimination of all other thoughts to succeed. On the other hand, playing the piano can transport you to a world you might not otherwise access.
